Katie Holmes is a whole new woman since her high-profile split from Tom Cruise and the Church of Scientology, FoxNews.com reports.

“Katie was so sweet and just so happy," said an eyewitness who saw the Dawson's Creek star with her mother at the Godiva Rockefeller Center Boutique in New York City late last month.

The source added that the former Mrs. Cruise will spend Valentine's Day with her daughter, Suri, making red pancakes just like Katie did with her mom as a child.

As Breaking Celebrity News exclusively reported, Katie wants to get back on the dating scene, but is still damaged from her divorce.

“She’s worried that if she commits herself fully to another man, she will have to give up the freedom she’s enjoying so much at the moment," a family insider told Radar. "As a single woman, she has no one controlling her nowadays, telling her what to do or who to see and she absolutely loves it!"
